It mainly comes from the endosperm of guar beans, which are widely cultivated in semi-arid areas such as India and Pakistan. It also grows in the United States and some African countries.
Appearance: white or yellowish-white powder, odorless, bland taste.
Main ingredients: It is a high-molecular hydrophilic polysaccharide composed of galactose and mannose as basic sugar units, belonging to galactomannan, with a relative molecular mass of 200,000-300,000.

Solubility:

Insoluble in organic solvents, can be quickly dispersed in cold or hot water and swell to form a high-viscosity thixotropic gel. Water is its only universal solvent.

Viscosity:

It is one of the most viscous natural colloids. The viscosity of 1% guar gum aqueous solution is as high as 4-5Pa・s. Its thickening rate and final viscosity are related to the particle size of the rubber powder, preparation conditions and temperature.

Thermal stability:

When the temperature rises, the viscosity of the glue decreases, because the hydrogen bonds on the molecular chains weaken when heated, and the stretching degree of the molecular chains increases.

Acid stability:

The natural solution is neutral, and the pH value in the range of 4-10 has no obvious effect on the properties of the glue solution. The viscosity of the glue can reach the maximum value when the pH value is 6-8.

Rheology:

The solution is pseudoplastic with non-Newtonian flow characteristics. As the concentration of the solution increases, the degree of pseudoplasticity increases, and it has good shear stability.

Compatibility:

It is a non-ionic polymer with good compatibility with inorganic salts and good tolerance to monovalent metal salts, but high-valent metal ions can reduce its solubility.

China GB 2760 allows it to be used as a thickener in various foods (such as dairy products, baked goods, meat products, etc., limited to the amount used according to production needs).
