Chemical Properties
Dissociation characteristics: Dissociate H⁺ in water step by step to form citrate ions (C₆H₅O₇³⁻). When heated to 100℃, it loses crystal water, and above 175℃, it decomposes into water, carbon dioxide, and acetic acid, etc. Condensation and dehydration reactions can occur at high temperatures to produce citraconic acid, itaconic acid, etc.
